Pork Tenderloin with Smokey Coffee Rub

4 servings from 1 lb tenderloin

1T brown sugar

1.5 tsp Spanish smoked Paprika

1 tsp garlic powder

1 tsp instand coffee

.5 tsp salt

.5 tsp onion powder

.5 tsp black pepper

1lb pork tenderloin

preheat oven to 425 degrees

combine first 7 ingredients

Rub sugar mix over pork. Cover and let stand at least 15 mins

Heat skillet over med-high heat. Oil pan and add pork

Cook 2 min each side browning equally

Bake @ 425 degrees for 20 min - thermo should read 160 degrees

Cooking Spray

1tp olive oil

Remove; cover pork; - rest 5 min

Add a half C water to drippings & cook to thicken as sauce
